Valentine's Day is right around the corner, and what sweeter way than to whip up this timeless dessert?
I love to make things from raw ingredients, and this strawberry shortcake recipe is no different. But no worries, it's very simple! The whipped cream is creamy, the strawberry sauce is sweet and a little tart, and the cake is moist and extra vanilla-y!
Sure, you can buy the ready-made stuff, but it won't be as delicious as this!
My recipe makes approximately 12 cupcakes or loafs:
What you'll need:
For the strawberry sauce:
1 cup diced strawberries
1 cup water
1/2 cup sugar
For the whipped cream:
1 cup heavy whipping cream
1/2 cup powdered sugar
1 tbsp vanilla extract
For the cake:
1 1/4 cup all purpose flour
1 cup sugar
1/4 tsp sea salt
1 3/4 tsp baking powder
1/4 cup water
1/2 cup milk
1/4 cup butter
1 tbsp vanilla extract
What to do:
Bring 1 cup water to a light boil on medium heat. Add sugar and strawberries. Stir occasionally to keep from burning, without breaking up the strawberries too much. Cook for about 15 minutes to reduce. Set aside in a heat-proof bowl in the refrigerator to cool.
Pour 1 cup heavy whipping cream in a large metal mixing bowl, add 1 tbsp vanilla extract and 1/2 cup powdered sugar. Use an electric whisk to beat the mixture until it begins to solidify, about 3-5 minutes. Store in the freezer for 5-10 minutes. Remove from the freezer and whisk again on high until peaks form. Repeat the process again if needed. Cover whipped cream and store in the fridge.
Now, on to the cake!
Mix the water and milk together in a measuring cup and set aside. Beat the eggs, butter, and sugar in a mixing bowl until fluffy. Add salt and baking powder. Add in the flour about 1/2 cup at a time, alternating with milk and water concoction. Beat the cake batter until there is a smooth consistency. Lastly, fold in the vanilla until evenly incorporated. Pour batter into cupcake pan- fill each cup about halfway to 3/4 full. Bake on 350 degrees for about 15-20 minutes.
Allow cake to cool, top with strawberry sauce and whipped cream. Enjoy!
