Chunky Loaded Mashed Potatoes



This is a quick, easy dish for you to make! I've made this as a Thanksgiving side, potluck, even church events!

Very simple recipe:

5 lb bag potatoes, peeled
1/4 cup butter
1-2 cups shredded cheddar cheese
1/4 cup diced chives
1 cup real bacon pieces (reduced sodium)
1 tbsp Italian seasoning
1/2 cup milk
1 tbsp Garlic powder
1 tbsp Sea Salt

Directions:
Peel potatoes, and cut into 1.5 inch sized pieces. Using a large pot, bring to a boil on the stove top until soft, but not easily mushy. Drain softened potatoes and rinse with cold water. Pour drained potatoes back into pot, and butter, add Italian seasoning, sea salt, and milk. Use a potato masher to mildly mash the potatoes leaving a lot of chunks. Add 1/2 of the bacon pieces and 1/2 of the cheese.
Gently stir to incorporate evenly, without losing to many of the chunks.

Pour mashed potatoes into a 9x12 casserole dish. Sprinkle the rest of the shredded cheese on top, then add the rest of the bacon bits, and topping with the rest of the chives. Place uncovered dish back in the oven for a few minutes on 350 degrees to allow the cheese to melt. Enjoy!
