Muffins:
2 c flour
2 medium eggs
2 tsp baking powder
1/4 tsp salt
1 1/4 c sugar
3/4 c half and half
1 tbsp vanilla extract
1/2 c butter
1/2 c blueberries
Streusel topping:
4 tbsp brown sugar
1 tbsp flour
1/2 tsp cinnamon
1 tbsp softened butter
1/2 tsp vanilla extract
Preheat oven to 350.
Prepare streusel topping by mixing all ingredients together with a whisk. Set aside.
Beat eggs, half and half, sugar, salt, and vanilla together until fluffy. Mix in baking powder. Add flour a little at a time. Gently fold in blueberries. Pour batter into muffin tin, bake for 12-15 minutes, or until done.
