INGREDIENTS:
4 boneless, skinless chicken breasts
1 lemon
1 lime
2 grape fruits
2 oranges
1/2 c honey
2 tbsp McCormick Rotisserie seasoning
1/4 tsp salt
1/4 tsp pepper
Optional: 0 calorie sweetener or cane sugar to taste
DIRECTIONS:
Create a marinade in a large bowl or bag: Cut chicken breasts in half, combine all together. Add lemon zest from the lemon, then cut the lemon, grapefruit, and orange into quarters and add to mixture. Add 1 tbsp rotisserie seasoning, salt, and 1/4 cup honey. Allow to marinate in the fridge for 2-3 hours.
In a large skillet, add 1/2 cup of the marinade juice and some slices of the fruit with the chicken. Cook the chicken until done, but don't let it brown.
Place the cooked chicken on a cookie warning rack on top of a cookie sheet. This is so the chicken will dry out a little. Coat the chicken with the rotisserie seasoning and pepper. Sprinkle on top with zero calorie sweetener or cane sugar to offset the acidity of the citrus. Allow to broil in the oven until golden brown, and slightly crispy. Drizzle honey on the finished chicken, and serve with your choice of veggies and a salad
